3 Minute Microwave Chocolate Cupcake

6 tbs plain flour
½ tsp baking powder
6 tbs golden caster sugar
4 tbs cocoa powder
2 eggs
4 tbs Carotino or other neutral oil
4 tbs milk or coconut milk
dusting sugar, ice cream, custard or some sauce / syrup to serve
EQUIPMENT
2 medium wide cappuccino cups
spoon
microwave
METHOD
Combine all ingredients together, share into two cups, place for about 3 minutes on full power in 800W microwave.
Serve dusted with icing sugar or even better with some sauce, custard or ice cream on a side as the cake is a little bit dry.
- If you are making only one cup use half of the ingredients and stir everything directly in the cup you were using for microwaving. Shorten the time to about 2 minutes.

I never use the microwave for anything other than reheating food. Maybe that will change with this cake:-)

Grease your cups before adding the mixture. Otherwise cleanup is a nightmare!

Candice, I did not have any problems washing the cups. Maybe because the mixture itself contain some oil already.

I tried this recipe the moment I saw it and was sorely disappointed by the flavor of the cake. Needs some definite tweaking but a great idea!

Mir, I agree with you. Cupcakes are a little dry, that is why I recommend serving it with custard or ice cream, but my kids love it.

I made this cake just now.. wonderful. it is a little dry compared to a regular cake, but again it is a few minutes cake. both my kids are eating with some vanilla ice cream & licking their fingers off!! Thanks!

I just made it! I think it would be more delicious if it wasn’t an experiment. I added peanut butter chocolate chips, but now I’m regretting that.. I also forgot to add the oil. YIkes! Still turned out pretty tasty. Especially with some ice cream! Thanks!
