Cornflake Coconut Chocolate Cakes

Coffee and Vanilla

INGREDIENTS

50g unsalted butter
4 tbs unsweetened cocoa powder
6 tbs golden caster sugar
6 tbs milk
1 cup grated coconut
about 150g cornflakes (I added a little too much and my cakes did not want to stick at first, but then after few minutes in the fridge they did stick anyway)

EQUIPMENT

12 medium paper or silicone muffin cases

METHOD

Place butter, cocoa powder, sugar and milk in a medium pot and heat over low fire stirring constantly until well combined. Add also coconut and cornflakes, stir, share to the muffin cases and place in the fridge until cooled down completely.

Make 12 cakes.

  • I have been without oven for the last two weeks… and that is why I end up making those little cakes ;)
