Spanish Smoked Paprika Chicken

INGREDIENTS

chicken pieces for 10 people (20 leg pieces, 10 breasts, 30 wings etc.)
3 quite big onions (cut into wedges)
2 garlic heads (peeled) or 2 tbs garlic granules
2 tbs dried thyme or small bunch of fresh thyme (stems can be discarded later)
1½-2 tbs Spanish smoked paprika (hot one)
3-4 tbs grape seed oil
4-5 Maggi cubes
hot water

EQUIPMENT

large, non-stick pot with cover

METHOD

Place chicken, garlic (if fresh used), onions and oil on a bottom of large non stick pot and fry over high fire stirring from time to time, until onion start getting brown.
Add the rest of ingeredients, pour over enough hot water to cover the chicken.
Cook over high fire, covered till chicken is very soft and most of the water gone.
You can also let it burn a little bit and then add more water, it will taste even better.

Serve 10 people or 5 people for 2 days.

  • Add generous portion (about 1 tbs) of freshly cracket pimento instead of in addition to thyme.
  • Spanish smoked paprika can be replaced with regular smoked paprika, if you want your dish to be spicy, just add pinch or two of Cayenne pepper.
