Sweet Carrot Salad

INGREDIENTS

  • 3 large carrots  – about 500g (grated)
  • 3 small apples  – about 300g (grated) – optional, can be replaced with more carrots
  • juice from ½ large lemon
  • 1½ tbs golden caster sugar or to taste

METHOD

  1. Grate carrots, then apples and quickly add lemon juice for apples not to get brown.
  2. Add sugar and mix everything together.

Serves 4 people as a side dish.

NOTES

This is salad that my mother used to make when I was a child.
