Mashed Potatoes with Leek

INGREDIENTS

1½ kg potatoes (washed and quartered)
1½-2 tbs Vegeta seasoning or other vegetable salt
water
½ cup soured cream
25g unsalted butter
1 medium leek – I used organic leek from Abel & Cole

EQUIPMENT

potatoes masher

METHOD

Cook potatoes in water with Vegeta until soft, drain and mash adding soured cream and butter. Cut leek in half lengthwise, wash it and slice finely.  Add to mashed potatoes and serve immediately.

Serve 4-6 people as a side dish.

    Have you ever tried mashed potatoes with curry powder and yogurt? It tastes different.

  2. Thank you Pepy for the tip, I will try next time… I often replace soured cream with natural yogurt, why I never thought of adding curry powder? :)
