Coconut & Sundried Tomato Chicken Stew


12 chicken drumstics
1 whole garlic (peeled & crushed)
4 tbs sundried tomato paste
1 small lime juice
2 onions (sliced)
½ cup coconut milk powder
1 ½ chicken cubes
3 tbs grape seed oil
½ tsp ground ginger root
1 tsp dried thyme or even better some fresh or
frozen thyme
2 ½ cups of water


Fry chicken and onion on oil for a while.
Add water and rest of the ingredients and cook covered till ready.
Serve with rice and some veggies.

Serve 6 people.
