Banana Chocolate Chip Muffins

 

INGREDIENTS

1 large egg
3 tbs oil (I used grape seed oil)
3 tbs milk
3/5 cup mashed ripe bananas (about 3 medium bananas)
2 cups (250g) plain flour
½ cup (100g) golden caster sugar
1 tbs baking powder
½ tsp salt
100g dark chocolate chips

EQUIPMENT

muffin tray
paper or silicone muffin cases

METHOD

Preheat the oven to 200°C (392°F).
Place the egg, oil, mashed bananas and milk in a mixing bowl and beat together.
In another bowl place the flour, sugar, salt, baking powder mix.
Pour in the liquid into the dry mix and stir until just blended.
Add chocolate chips and stir one more time.
Line a muffin tray with muffin cases, and then fill each case to just above the muffin tray level.
Bake for about 20 minutes, reducing heat towards the end of baking if top of the muffins getting brown too quickly.

This recipe makes 12 muffins.

* Muffins taste better next day.
