Warm Pasta Salad with Baby Leaves, Smoked Paprika, Garlic, Cracked Pepper and Parmesan

INGREDIENTS

500g pasta, wholemeal would be the best (cooked and drained)
100g seasonal mixed baby leaves or some lettuce
3 large tomatoes (cubed) or some cherry tomatoes (halved)
1-2 yellow bell peppers (cubed)
1 tbs smoked paprika powder
2 tsp garlic granules
black peppercorns
few tbs olive or Carotino oil
grated Parmesan cheese
sea salt to taste

METHOD

Combine drained pasta with olive oil, garlic granules, smoked paprika, season to taste with salt. Mix in salad leaves, tomatoes and bell peppers. Share to the plates, sprinkle over Parmesan and freshly ground pepper.
Serve immediately.

Serve 4-6 people as lunch, snack or side dish.

  • You can use for this salad any leftover pasta, just heat it and stir in seasonings, leaves and some veggies.
