½ large cucumber (cubed)
4 small tomatoes (cut into wedges)
½ iceberg lettuce (cut finely)
2-3 spring onions (chopped)
2 tbs mayonnaise
2 tbs soured cream
freshly ground rainbow peppercorns
15 basil leaves (chopped)
15 fresh / frozen mint leaves (chopped)
Mix all vegetables in a large mixing bowl, add mayonnaise and soured cream.
Season with salt, onion granules and rainbow pepper.
Add chopped basil and mint and stir one more time.
Serve 4 people as a side dish.
