500g tomatoes, about 6 small ones (cut into wedges)
100g mixed leaves (rocket / arugula / rucola, watercress, baby spinach, lambs lettuce, endive, radicchio, apollo lettuce, lollo verde, ret batavia etc.)
small handful of fresh / frozen coriander/cilantro leaves (chopped) – optional
olive oil – optional
maple syrup – optional
Combine tomatoes, leaves and coriander in a bowl, sprinkle with balsamic vinegar, olive oil, maple syrup and serve to the plates.
Serve 3-4 people as a side dish.
