Lemon & Mint Bulgar Wheat

[recipe adapted from “Mainly Vegetables” by Colin Spencer]


500g bulgar wheat (prepared according to the packet instructions)
5-6 hard boiled eggs (chopped) – optional
4-5 sweet bell peppers: red, orange and yellow (finely chopped)
1 cup fresh mint leaves (chopped)
2-3 red onions (finely chopped)
3 tbs fresh / frozen parsley
3 tbs fresh / frozen coriander / cilantro
4 tbs chives or green part of spring onions (finely chopped)
1 whole garlic (peeled and chopped)
5 tbs olive oil
ground black pepper
1-2 lemon juice


Mix all ingredients together except salt, pepper and lemon juice.
Season with salt and black pepper.
At the end add lemon juice to taste.

Serve warm or cold.

Serve 5-6 people as a side dish.

    I love bulgar wheat, this is perfect with a nice oily fish like mackerel and perhaps a simple fruity salsa.
