Jerk Chicken

INGREDIENTS

chicken pieces for 3-4 people
2-3 tbs corn or grape seed oil
3 medium onions (chopped)
1 chicken cube (10g)
1 tsp jerk seasoning
2 cups of water

METHOD

In a large pot fry chicken and onions on oil.
Add water, cubes and jerk seasoning, cover and cook till chicken is tender.
Then uncover and cook some more till there is not too much water in the gravy.

You can also marinate chicken in jerk seasoning and oil overnight and next day add only water, onions and cube.

Tastes good with “Mashed Potatoes” and “Rosemary Veggies”, “Boiled Sweet Potatoes” or “Grilled Butternut Squash”. You can also serve it with pasta or rice and “Lettuce in Lime Juice”.

Serve 3-4 people.

  1. I love me some jerk. Whenever I visit Jamaica, I love it buy it as a street food. I’ve never been to the famous Jerk pit.
