Fried Pineapple

INGREDIENTS

1 fresh sweet (ripe) pineapple
1 tbs neutral oil

METHOD

Discard top and bottom of the pineapple and cut it lenghtwise in half. Then cut each piece again lenghtwise in two or tree. From each piece cut off hard inside and then remove the skin until there is no more prickly things. Slice and fry on high fire on both sides until browned on greased frying pan.

Serve as a side dish for instance with some breaded turkey breast and coconut rice.

Make 3-4 servings.
