Simple Guacamole, Fresh Salsa & Garlicy Cream for Chicken Fajitas

INGREDIENTS

for guacamole

2 medium or 1 large and ripe avocado (peeled, seed removed)
½ lime / ¼ lemon juice or to taste
sea salt to taste
1-2 garlic cloves (crushed) or some garlic powder to taste – optional

METHOD

Mash everything together with fork or hand blender and leave aside.

INGREDIENTS

for fresh salsa

4 medium tomatoes (diced)
handful of fresh coriander / cilantro (chopped)
½ onion (diced) – I used red onion for milder flavour

METHOD

Combine all ingredients and leave aside.

Instead of making fresh salsa you can also use ready salsa sauce, tacos sauce etc.

for garlicy cream

1 cup soured cream
1 tsp garlic granules or some fresh garlic (minced)
sea salt to taste

METHOD

Combine all ingredients and leave aside in a cold place.

INGREDIENTS

for chicken fajitas

600g fresh chicken breast (sliced) – I used about 400g ready to eat frozen chargrilled chicken pieces
1 onion (cut into wedges)
1 red bell pepper (sliced)
1 yellow bell pepper (sliced)
1 green bell pepper (sliced)
2 tbs of oil – I used grapeseed oil
sea salt to taste
1 tbs smoked paprika powder
Cayenne pepper to taste

8-10 tortilla wraps to serve

METHOD

If using fresh chicken fry it first on oil with spices and onions, then when almost ready add peppers and fry only a while longer not to overcook green peppers because they will turn bitter. If using frozen & cooked chicken, first fry onions on oil, then add chicken and spices and at the end peppers.

You can replace spices and salt with ready fajita seasoning if you want.

When chicken is ready heat tortilla wraps for a minute in microwave or oven, serve to the table with all side dishes: guacamole, salsa and garlicky cream. Let everyone wrap their own fajitas.

Serve 4-5 people.

  • Guacamole, salsa and garlicky cream can be also used as a sauce for tacos or dip for tortilla chips.
  • For fajitas I don’t add garlic to guacamole but when I make guacamole as a dip for chips I like to add some garlic for richer flavour.
  • If you have any leftover guacamole, fresh salsa and garlicky cream you can mix them together and use as a sauce for sandwiches or dip for crackers.
  • Another great side dish for fajitas are refried beans.
