2 cups easy cook long or short grain white rice
3 cups water
⅓ cup coconut milk powder
⅓ cup grated / desiccated coconut
2 litres microwave dish or pot
Place all ingredients in microwave dish, cover and cook according to your microwave settings, it took me about 20 minutes. Remove from microwave, stir and serve to the plates.
If you use pot cook rice covered over medium fire. Stir from time to time.
Taste good with chicken, for instance “Jerk Chicken”.
Serve 4 people.
