Creamy Puy Lentils with Herbal Pepper

January 14th, 2008 by Margot

INGREDIENTS

250g puy (le puy/du puy) lentils – a little bit more than 1 cup – (rinsed in cold water and drained)
400 ml hot water
1 vegetable cube (10g)
½ cup double cream
2 tbs grape seed oil
2 onions (finely chopped)
1 whole garlic (peeled and crushed with a side of a knife blade)
1 tbs herbal pepper mix

METHOD

Place lentils, water and vegetable cube in a pot.
Simmer covered for about 45 minutes.
In meantime fry onions and garlic on oil.
When lentils are ready, and there is almost no more water, combine with fried onions.
Stir in cream. Serve to the plates.

Make 4 servings.
