Sweet Chilli Chicken Stir-fry

[adapted from “Food for Health and Fitness” by Helen O’Connor & Donna Hay]


chicken pieces for 4 people (4 breasts or 8 drumsticks, tights etc.)
2 handfuls of garlic flakes
2-3 tbs grape seed oil
2-3 pinches of salt
6 spring onions (chopped)
250g runner beans (trimmed and cut into 4-5 cm pieces)
2 courgettes / zucchinis (sliced)
1 sweet red bell pepper (deseeded and sliced)
3 tbs tomato puree
3 tbs sweet chilli sauce
½ cup water
400g cooked ditali rigati or any other pasta


Season chicken with salt and fry on oil till tender.
Add spring onions and runner beans and fry some more.
Add tomato puree, chilli sauce, water and fry for till water is gone.
At the end add courgettes and pepper and stir fry for a while longer, till courgettes are soft.
Serve over cooked pasta.

Serve 4 people.
