Spicy Carrot Soup

[recipe adapted from: A Spoonful of Sugar]


3 litres of water (101.44 fl. oz)
2 cups of orange juice
7-8 cm ginger root (about 3 inches)
6 garlic cloves
8 large chicken cubes (10g each)
2 handfuls of fresh chopped coriander / cilantro
1½ kg carrots
2-3 small dried bird’s eye chilli peppers or less
3 tsp ground cumin
3 tsp ground coriander


Peel ginger root and slice, peel garlic, carrots chop in few pieces.
Place all ingredients except orange juice in large pot and cook covered for about an hour.
Add orange juice. Then blend the soup until smooth. Pour into bowls.

Serve with some side dish, for example “Green Banana Cakes”, as this soup has almost no calories.

Makes 10 servings.
