Smoked Paprika Spaghetti with Chicken, Green Beans, Sweet Pepper & Olives

INGREDIENTS

500g spaghetti
450-500g chicken breast (diced)
2 tbs unsalted butter
2 tbs Carotino or olive oil
2 tbs mild smoked paprika
2 tsp garlic granules
300g flat beans, dwarf beans or any other green beans (sliced)
1 red sweet pointed pepper or bell pepper (diced)
3 banana shallots or 1 onion (diced)
handful or two of black olives (sliced)
fresh basil leaves (chopped)
black pepper
4-8 tbs grated cheese ( I used Parmesan)

METHOD

Cook pasta in lost of salty water, drain, leave aside.

On the bottom of the pot or wok stir-fry chicken and onions on oil and butter. Once they are golden add beans, season with smoked paprika, garlic, once beans are soft to your liking stir in pepper, olives & pasta. Stir well, season to taste with salt.

Share to the plates, sprinkle with grated cheese, basil and freshly cracked pepper.

Make 4 servings.

  4. I made this dish , it tasted perfect. I’m not really exactly what you’d refer to as an experienced cook, and really do not enjoy baffling recipes that will leave me stressed out when cooking. This is certainly so simple and delicious, excellent accompanied by a glass or two of white wine. Many thanks.
