Mushroom Chicken


1½ kg chicken (legs, breasts)
1 large vegetable cube (10g)
1 medium leek (sliced)
6 garlic cloves (peeled)
500g chestnut mushrooms or other mushrooms (sliced)
½ cup fresh or frozen parsley
1 tsp dried thyme or even better some fresh or
frozen thyme
2 cups of water
2 x 400g tins of mushroom soup
oil for frying (I used corn oil)


Place chicken in large pot, add cube, soup and water.
Sliced mushrooms fry for a while on oil and then add to the pot.
Add also garlic, leek and herbs.
Cook till chicken is soft and gravy quite thick.

Serve with white rice.

Serves 5-6 people.
