Chicken, Lentils & Dumplings Soup

INGREDIENTS

1-1.2 kg chicken wings – 15-20 wings (cut in 3 pieces)
2 tbs Carotino oil
4-6 onions (chopped)
1 whole garlic (peeled & crushed or sliced)
10 cups hot water (2½ litre)
4 chicken cubes (10g each)
2½ cup (500g) easy cook green lentils
1 tbs mild curry powder
1 tbs garlic granules
2 tsp turmeric (for colour)
1-2 tsp hot sauce or ½ dried chilli flakes / crushed chillis
1 tbs dried thyme or even better some fresh Jamaican thyme or
frozen thyme
1 unwaxed lime cut in half or ½-1 lemon juice
3-4 cups self rising flour
cold water for dumplings

METHOD

Place chicken, onions, garlic and oil in a large pot and fry till onions start getting brown.
Add water, cubes, lentils, curry powder, lime halves or lemon juice, garlic powder, turmeric, hot sauce, thyme and cook covered.
In meantime prepare dumplings from flour and water, adding water slowly to create soft but not sticking to hands dough.

When chicken and lentils are ready it is time to add dumplings. Take small pieces of the dough in your hands, create oval shapes, about 1½ cm thick, and drop them in the pot. You have to do it quite quickly so all of them will cook evenly. Cook covered some more till dumplings are ready. If you were using halves of lime, take them out from the pot and discard. Serve soup to the plates.

Serves 5-6 people.
