Chicken Soup with Christophenes, Yam, Swiss Chard and Jamaican Thyme

INGREDIENTS

whole chicken (separated) or chicken pieces for 5-6 people
3 litres of boiling water
5 chicken cubes (10g each)
2 christophenes (peeled, cubed)
handful of fresh Jamaican thyme (with stems)
½ tsp chilli flakes
4-5 carrots (coarsely sliced)
5 cm thick piece of yam (peeled, cubed)
whole garlic head (each clove crushed with the side of the knife and peeled)
4 large potatoes – about 600g (cubed)
small bunch of Swiss chard (chopped coarsely)

METHOD

Place chicken, cubes, water and cook covered until chicken is almost ready. Reduce fire, add carrots, thyme, yam, christophenes, potatoes, garlic and chilli flakes. Cook covered until all vegetables are ready. Discard thyme stems, leaves should be separated from them by that time. Add chard to the soup and cook for couple of more minutes, only until leaves are witted.

Share to the bowls and serve immediately.

Serve 5-6 people.
