Sweet Thick Pancakes

[adapted from “Food for Health and Fitness” by Helen O’Connor & Donna Hay]


  • 4 ½ cups self rising flour
  • 4 ½ cups milk
  • 1 cup of soft dark brown sugar
  • 6 eggs (lightly beaten)
  • 2 tsp baking powder


  1. Mix all ingredients together.
  2. Fry on low fire on both sides using non stick frying pan without any oil.
  3. Serve hot or cold with maple syrup, honey, jam or fresh fruit and whipped cream.

Makes 15-20 medium size pancakes.
