Simple Avocado & Tomato Salad with Mint

Coffee and Vanilla

INGREDIENTS

2 medium “ready to eat” avocados (peeled, cubed)
4-5 large vine tomatoes (cubed)
3 tbs cream cheese
1 tsp garlic granules
sea salt to taste
freshly cracked black pepper to taste
handful mint fresh leaves (chopped)

METHOD

Combine cream cheese with garlic granules on the bottom of salad bowl, add tomatoes and avocados. Mix, season to taste with salt and pepper, store in the fridge until you are ready to serve.

Serve 4-5 people as a salad.

  • Chop first tomatoes and stir in avocado to them so they won’t turn brown.
