Minty Lemon Vinaigrette


juice of 1 lemon
3 tbs olive oil
1 tbs golden caster sugar or to taste
handful of fresh mint leaves (chopped)


Mix all ingredients on the bottom of large salad bowl.

Then add favourite lettuce (washed and teared) and mix well. Place in the fridge for couple of minutes to cool down.

Makes enough vinaigrette for large lettuce head.
