English Thyme and Parmesan Rice


2 cups easy cook rice
4 cups water (3½ cups water if cooked in microwave)
6 spring onions (chopped)
2-3 tbs fresh English thyme or frozen English thyme
25g unsalted butter
4 garlic cloves (minced)
salt to taste
grated parmesan cheese to taste (about 50g)
rainbow peppercorns
turmeric / curcuma for colour


Cook rice in covered pot over medium fire with 4 cups of water. You can also prepare it in microwaveable container with lid, add 3½ cups of water and cook for 20 minutes on full power. When rice is ready leave aside.

In meantime fry in a large frying pan or wok spring onions, thyme and garlic on butter till fragrant.
Add rice, turmeric, salt to taste, parmesan to taste and stir well. Season with freshly ground pepper and serve to the plates.

Serve 4-5 people as a side dish.
