Cesar Salad with Homemade Croûtons

INGREDIENTS

1 large or 2 smaller lettuces (I like to use Iceberg or other crisp lettuce)
30g tin of anchovies (oil discarded)
4 tbs mayonnaise
4 tbs soured cream
¼ of the baguette or similar bread roll (sliced)
15g unsalted butter to fry croûtons
1 garlic clove (chopped finely) or ½ tsp garlic powder
4 tbs grated Parmesan cheese
black peppercorns

METHOD

To prepare croûtons:  slice bread roll and fry on butter on both sides until crunchy, leave aside.

Wash lettuce, leave aside to drain.
On the bottom of salad bowl prepare sauce blending half of the anchovies, mayonnaise, garlic & soured cream. Chop the rest of the anchovies and add also to the sauce, then add torn lettuce. Serve to the bowls, sprinkle with Parmesan and freshly ground black pepper, top with croûtons.

Serves 4 people.

  • Instead of preparing your own croûtons you can use ready ones.
  • Parmesan can be replaced with other grated cheese, sometimes I use Mozzarella for milder flavour.
