Filipino Style Chicken Soup with Mung Beans, Garlic and Bay Leaves

INGREDIENTS

chicken breasts/wings for 5-6 people
2 onions (cut into wedges)
2 garlic heads or 2 tbs garlic granules/powder (peeled)
3 tbs oil (I used grapeseed oil)
10-15 bay leaves
2 cups mung beans
10 small potatoes or some other starchy vegetable such as yam or green plantains/bananas
3 chicken cubes (10g each)
4 cups of hot water
2 tbs turmeric / curcuma
cooked rice to serve
chilli sauce (I used sweet chilli sauce) to serve

EQUIPMENT

large/non-stick pot with cover

METHOD

Place chicken, onions, bay leaves, garlic if fresh used and oil in a pot and saute until onions and chicken are golden brown. Add the rest of ingredients and cook covered until chicken, mung and potatoes are ready.
Add some more water if soup is too thick.

Serve with rice topped with chilli sauce on a side.

Serve 5-6 people.
