Broccoli, Pepper and Green Bean Cheesy Curry Rice

INGREDIENTS

bunch of spring onions (chopped)
2-3 tbs olive oil
500g frozen broccoli florets
500g frozen green beans
1 tbs paprika powder
2½ tbs Adobo seasoning
4 tbs Korma curry paste (I used Patak’s Korma with Coconut and Coriander)
3 cups easy cook rice (I used long grain)
5 cups of water
2 sweet pointed peppers – 2 colours (sliced finely)
200g grated cheese (I used mild Cheddar)

METHOD

On the bottom of large pot fry spiring onions on oil until witted.
Reduce fire, add broccoli, beans, Adobo, paprika, curry paste and cook covered for 5 minutes.
Then add rice and water, cook still covered until all water is gone and rice ready.
Stir in peppers, cook 1 minute longer. Remove from fire, add cheese and mix well.

Share to the plates and enjoy.

Serve 5-6 people.
