30 Minute Yellow Lentil & Roasted Pepper Soup

October 13th, 2009 by Margot

Coffee and Vanilla

INGREDIENTS

500g dry yellow split lentils
3000 ml boiling water
4  vegetable or chicken cubes (10g each)
3-4 red bell peppers
1 tbs garlic granules or few garlic cloves
1 tbs dried oregano
smoked bacon slices – optional

EQUIPMENT

large non-stick pot with lid
hand blender
gas cooker
tongs
container with lid, plastic bag or bowl and a plate
large baking tray to grill bacon – optional

METHOD

Place lentils, 2000 ml of water, cubes, garlic and oregano in a pot and cook covered for about 30 minutes.

In meantime burn peppers over gas until each side is black. Place in container, cover with lid, let them steam for about 10-15 minutes. Rub of with your hands some burned skin, but not all, Deseed ad leave aside.

If you are making non-vegetarian version of the soup, place backon on the baking tray and grill until crispy. Then chop it and leave aside.

When lentils are ready add roasted pepper and blend until almost smooth. Add remaining water or leave soup as it is, depends on how thick you like it, and stir well.

Share to the bowls, sprinkle with crispy bacon and serve with some fresh buttered bread on a side.

Make 4 large or 6 medium portions.

  • I got some feedback that the soup turning out too watery, so if you like thicker soup use only 2000ml water on the beginning. You can always add more boiling water later, after blending the soup to adjust it to your liking.

This is a beautiful soup. I could probably use some red lentils. I don’t have yellow lentils at the moment. Thanks for a wonderful recipe.

I made this today- the recipe says 500 yellow split lentils I presumed it was 500 grams but after adding 3000ml water(12 CUPS) it was so thin I had to throw it out- where did I go wrong- looks so good on the photo.
