Salad with Roasted Peppers, Feta, Cucumber and Sundried Tomatoes

lettuce (washed, teared)
1 small English cucumber (cubed)
2-3 red bell peppers (roasted and cubed coarsely)
200g salad cheese / feta (cubed)
black or rainbow peppercorns
2-3 tbs olive oil or juice from soaking tomatoes
handful sundried tomatoes (dry), soaked in the water few hours before or overnight, then drained and chopped
EQUIPMENT
tongs
container with lid, plastic bag or bowl and a plate
METHOD
Burn peppers over gas until each side is black. Place in container, cover with lid, let them steam for about 10-15 minutes. Rub of with your hands some burned skin, but not all. Deseed, cube, place in a salad bowl.
Add also lettuce, cucumber, cheese, olive oil and sundried tomatoes, season with freshly cracked pepper and some olive oil or juice from soaking tomatoes. Mix well, share and enjoy.
Serve 4 people as side dish or snack.
