Quick Cheesy Tomato, Onion and Garlic Sauce

INGREDIENTS

1 onion (finely chopped)
1 tbs Carotino oil
100g mild cheese (cubed)
⅓ cup concentrated tomato puree
3 tbs sun dried tomato puree
2 tbs garlic puree
1 tsp dried marjoram
½ vegetable cube
2 cups hot water

EQUIPMENT

hand blender

METHOD

On the bottom of small sauce pan fry onions on oil until translucent. Add tomato puree, sun dried tomato puree, garlic puree, marjoram, crushed cube, hot water and cook for couple of minutes. Then add cheese and cook only until melted. Then blend sauce using hand blender.
Serve over your favourite pasta.

Makes enough sauce to serve over pasta for 4 people.

    Hi Margot,
    I returned from holidays and finally tried the herbal pepper you gave me. It’s a fantastic mix and very aromatic. If you want to see the pictures they’re on my blog http://tertuliadesabores.blogs.sapo.pt . I made a very simple recipe with vegetables and cuscus, but next time I will cook it with chicken.
    I followed your instructions and put herbal pepper at the end of cooking, but could it be possible making a marinade for chicken and then cook it?

    Moira – I’m glad you like the pepper, and yes, you can use it for marinade as well… it is just more aromatic, when added towards the end. So when I use it like you, for marinade, I usually just add some more at the end again if the flavours fade too much.
