Pear, Pecan and Chocolate Muffins

2 cups plain flour
2 tsp baking powder
¾ cup golden caster sugar
1 egg
1 cup milk or a little bit more
75g unsalted butter
75g pecans / ¾ cup (chopped)
300g optionally peeled and cored pears (cubed) – about 3 small pears
125g dark chocolate bar (chopped)
EQUIPMENT
12 paper or silicon muffin cases
muffin tray
METHOD
In a bowl mix all dry ingredients together: flour, baking powder, chocolate and sugar.
Melt butter and leave aside till cooled down, combine with milk and egg, add to the bowl with dry ingredients. Stir in pears and pecans.
Fill muffin tray with muffin cases, then fill each muffin case with the dough.
Bake in preheated oven to 180°C (356°F) for about 25-30 minutes till golden brown.
Let them cool down before eating.
This recipe makes 12-14 muffins.

I tried pomegranate in a muffin and know friut makes for moist muffins. And like the idea of chocolate pieces rather than chips.

Margot, this is a very nice recipe! I would have never thought of using a pear in muffins – what a great idea. Must make it moist, the way I like muffins. I agree with Aparna, chocolate pieces go better than chips in a cupcake. Tried and tested:) I am saving your recipe! I want to try out some of your Polish recipes, too! So many things to try!!! Yum!
